Thai Fried Strips
Ingredients:
300g boneless chicken breast, cut into thin strips
1 egg
2 tbsp cornflour
2 tbsp all-purpose flour
Salt and black pepper to taste
1 tsp garlic powder
1 tsp chilli flakes
Oil for deep frying
1 tbsp Thai red curry paste (optional for added spice)
For the sauce:
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp vinegar
1 tsp sugar
1 tsp sriracha or Thai sweet chilli sauce
1 garlic clove, minced
1/2 tsp sesame oil
Instructions:
Marinate the Chicken: In a bowl, mix chicken strips with salt, pepper, garlic powder, and chilli flakes. Let it rest for 10 minutes.
Prepare the Batter: Beat the egg in a bowl. In another bowl, mix cornflour and all-purpose flour. Dip the chicken first in the egg, then dredge in the flour mixture.
Fry the Strips: Heat oil in a wok or deep pan. Fry chicken strips until golden and crispy, about 4–5 minutes per batch. Remove and drain on paper towels.
Make the Sauce: In a small pan, heat sesame oil. Add garlic and sauté until fragrant. Add all the other sauce ingredients and stir until slightly thickened.
Toss and Serve: Toss the fried chicken strips in the sauce just before serving for a glossy, sticky coating.
Lemongrass Chicken Stir-Fry
Ingredients:
300g chicken thigh or breast, thinly sliced
1 stalk lemongrass (white part finely chopped)
1/2 cup sliced bell peppers
1/2 cup onions, sliced
2 garlic cloves, minced
1 tbsp oil
1 tbsp soy sauce
1 tbsp fish sauce (optional)
1 tsp sugar
1/2 tsp chilli flakes
Fresh coriander for garnish
Lime wedges (for serving)
Instructions:
Prep the Ingredients: Slice chicken thinly against the grain. Chop the lemongrass finely – the white part is most fragrant.
Stir-Fry the Aromatics: Heat oil in a wok. Add garlic and lemongrass. Sauté for 1–2 minutes until fragrant but not browned.
Cook the Chicken: Add chicken slices and stir-fry on high heat until almost cooked through (about 4–5 minutes).
Add Veggies: Toss in onions and bell peppers. Cook for another 2 minutes, keeping the veggies slightly crisp.
Season and Finish: Add soy sauce, fish sauce, sugar, and chilli flakes. Stir well and cook for another minute.
Serve Hot: Garnish with coriander and serve with steamed jasmine rice or noodles. Squeeze lime juice for extra zing!
