What Is Singapore Chilli Chicken?
Despite its name, Singapore Chilli Chicken isn’t native to Singapore alone—it draws influence from various Southeast Asian cuisines. It's a spicy stir-fry typically made with chicken, peppers, onions, garlic, and a bold chilli-based sauce. It balances heat with sweetness and tang, making it an irresistible weeknight dinner or party dish.
Ingredients
For the Chicken Marinade:
500g boneless chicken thighs or breast, cut into bite-sized pieces
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp cornflour
1/2 tsp white pepper
For Stir-Frying:
2 tbsp oil (vegetable or sesame)
1 onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
3-4 dried red chillies (optional, for extra heat)
2 garlic cloves, minced
1-inch piece of ginger, grated
2 spring onions, chopped (for garnish)
For the Sauce:
2 tbsp chilli garlic sauce (like Sriracha or Sambal Oelek)
1 tbsp soy sauce
1 tbsp tomato ketchup
1 tsp vinegar (white or rice)
1 tsp sugar
1/4 cup water or chicken stock
1 tsp cornflour mixed with 1 tbsp water (slurry)
Instructions
1. Marinate the Chicken
In a bowl, mix chicken pieces with soy sauce, sesame oil, cornflour, and white pepper.
Set aside for 15–20 minutes.
2. Prepare the Sauce
In a small bowl, combine chilli garlic sauce, soy sauce, ketchup, vinegar, sugar, and water. Set aside.
3. Cook the Chicken
Heat 1 tbsp oil in a wok or large skillet over medium-high heat.
Stir-fry the marinated chicken until browned and cooked through (about 6–8 minutes). Remove and set aside.
4. Stir-Fry the Vegetables
In the same pan, add another tablespoon of oil.
Add onions, peppers, garlic, ginger, and dried red chillies. Stir-fry for 2–3 minutes until slightly softened but still crisp.
5. Bring It All Together
Return the chicken to the pan.
Pour in the sauce and toss everything together.
Stir in the cornflour slurry and cook for another 2 minutes until the sauce thickens and coats the chicken evenly.
6. Serve
Garnish with spring onions.
Serve hot with steamed jasmine rice or noodles.
