  • Salt & pepper to taste

  • Dumpling wrappers (store-bought or homemade)

Instructions

1. Prepare the Dumplings
In a mixing bowl, combine grated potato, finely shredded cabbage, chopped coriander, and green chili. Season with salt and pepper, then mix thoroughly.

Take a dumpling wrapper, add about 1 teaspoon of filling, moisten the edges with water, fold, and seal tightly. Steam for 8-10 minutes or pan-fry for 2-3 minutes until golden, then steam for another 5-6 minutes. Set aside.

2. Stir-Fry the Dragon Noodles
Heat oil in a wok and sauté chopped green chili for 30 seconds. Add the vegetables in stages, starting with cabbage, then carrots, bell peppers, and shiitake mushrooms.

Stir-fry for 3-4 minutes, then add light and dark soy sauces. Add cooked noodles, tossing well for 2-3 minutes until the noodles are crispy at the edges. If needed, add a splash of water or oil to prevent sticking.

3. Assemble and Serve
